Easy Pea Soup with Lemon and Thyme

    1 16 oz package frozen peas
    0.50 cup fresh lemon juice, 2-3 lemons
    1 sprig fresh thyme, leaves only
    0.50 tablespoon sugar
    0.50 teaspoon sea salt
    0.25 teaspoon ground pepper
    2 tablespoons olive oil
    1 cup water, add more for a thinner soup



    Process all soup ingredients in blender until smooth consistency.
    Mark as complete

    Serve cold or transfer to pot over medium/low until hot.
    Mark as complete


    This amount of lemon juice produces a tangy soup. Decrease this amount if a more mild flavor is preferred.
