    1 pound ground beef
    1 packet taco seasoning, low sodium
    0.75 cup of water
    0.50 cup of extra virgin olive oil
    8 flour tortillas, taco size
    15 oz can refried beans
    10 oz can red enchilada sauce
    8 oz colby jack cheese, shredded
    1 large tomato, diced
    2 green onions, sliced
    1 small can of sliced olives, drained

    Air Fryer Tortillas

    Preheat air fryer to 350 degrees. Brush olive oil on both sides of tortillas with a pastry brush. Stab tortilla with a fork on both sides to prevent bubbles in air fryer.

    Place individual tortillas in air fry for about 3 minutes until ligthly browned. Flip every minute.When finished, flatten tortilla between two plates and a heavy bowl on top, if needed.Repeat until all tortillas are done and set aside.Tip: If your air fryer is blowing the tortillas around, set a trivet gently on top of the tortillla. It will allow the air to circulate but keep them mostly in place and flat.

    Prepare ingrendients

    Preheat oven to 400 degrees. In a large skillet, brown and and crumble ground beef.

    Drain excess grease. Add 1 packet taco seasoning and 3/4 cup water and stir. Bring to a boil then reduce heat and simmer until thickened.
